Steve's Oatmeal
This is a recipe my husband makes and this last time it was incredible!
Hope that you enjoy this recipe too!
Ingredients:
1 cup of milk (we normally use soy milk, for this recipe we used vanilla almond milk)
2 cups of water
Dash of salt
2 cups of oatmeal (we use quick cooking oats, does not work well with instant oats)
2 tablespoons of butter (we use Earth Balance or Smart Balance Light)
2 tablespoons of brown sugar
2 teaspoons of vanilla (use less if you use vanilla soy or almond milk)
2 teaspoons of cinnamon
1 ripe banana (optional, or can use any fruit you enjoy)
Directions:
Place medium sized pot onto burner on high.
Add one cup of milk and two cups of water, bring it to a boil. Make sure to stir so the milk does not burn on the bottom.
When boiling add a dash of salt.
After comes to a boil add 2 cups of oatmeal. Make sure at a rolling bowl and reduce to a simmer.
Let simmer 5-10 minutes until it has reached the desired thickness.
Once at the desired thickness add your additional ingredients, 2 tablespoons of butter, 2 tablespoons of brown sugar, 2 teaspoons of vanilla, 2 teaspoons of cinnamon. We don't always use vanilla almond or soy milk, when we do we reduce the amount of vanilla used.
Mix everything together, top with banana or fruit of your choice, serve and enjoy!
