Diced Potatoes with Spinach

















Diced Potatoes with Spinach


Ingredients:

2-3 Potatoes
Fresh Spinach, 3 cups or 3 large handfuls
Salt
Pepper
Garlic Powder
Onion Powder
Red Pepper Flake
Olive Oil

Directions:

Take two or three potatoes, clean them, dry them, then slice and dice them up until they are all about the same cubed shape. The more potatoes you dice the more left overs you will have. Keep that in mind.

While you are dicing your potatoes put a pan on the stove top with a little bit of olive oil inside and place on medium heat.

Once potatoes are ready place them all in the pan or you can always put them in the pan a little at a time while chopping everything up. Point is to get them all to cook evenly.

It will take about fifteen minutes to finish cooking, give or take a few minutes based on the age of your stove.

I put a dash of salt in to get the cooking started once the potatoes are first in the pan, then after about five minutes I added the garlic powder, onion powder, pepper, red pepper flakes.

Once the potatoes are almost completely cooked take three large handfuls (or three cups) of fresh spinach and incorporate that into the dish. Make sure to not leave the spinach in to long otherwise it will burn and won't be good eats anymore.

Once the potatoes and spinach are finished cooking, remove them from the heat, serve them up and enjoy!
