Blondies













Blondies

Ingredients:

1/2 cup soy margarine (1 stick) (I use Earth Balance)
1 1/2 cups unbleached flour (plus a bit more to flour your pan)
3/4 cup cashew pieces (or you can use other nuts)
1 teaspoon baking powder
1 teaspoon salt
3/4 cup packed light brown sugar
1/2 cup white sugar
Ener-G egg replacer for 3 eggs (follow box directions)
1 teaspoon vanilla extract
1 cup chocolate chips

Directions:

Preheat the oven to 350 degrees F.

Spray a 9 inch square brownie pan with some cooking spray, or coat with a little soy margarine or Earth Balance.

Sprinkle with flour, and tap it around to coat the pan. Dump any excess into the sink.

Chop nuts in food processor or blender.

Cream together the margarine and sugars until light and fluffy (Using a mixer works best)

Add the Ener-G eggs and the vanilla and beat until well combined.

Add in the flour, baking powder and salt and beat until just combined.

Stir in the chopped nuts and chocolate chips.

Spread out evenly into the pan.

Bake until golden on top and toothpick comes out barely clean, around 40-50 minutes. (A single batch will need at least 40 minutes and a double batch will need at least 50-55 minutes)

Let cool and cut into squares.
