
Awesome Vegan Breakfast Bake
Ingredients:
6 slices of bread, lightly toasted (I use whole wheat but you can use whatever you like)
Vegan Breakfast Sausage (I buy mine from Whole Foods, comes in a tube)
2 cups Soy Milk
1 cup Silken Tofu
3 Tablespoons Tahini (or you can use Sesame Oil)
2/3 cups Nutritional Yeast
3 teaspoons Onion Powder
2 teaspoons Yellow Mustard
2 teaspoons Sea Salt
1 teaspoon of Pure Maple Syrup
1 teaspoon lemon juice, fresh is best
1/2 teaspoon Garlic Powder
1/2 teaspoon thyme
Freshly ground black pepper, to taste (1/4 - 1/2 teaspoon)
1/4 teaspoon marjoram
1 teaspoon Crushed Red Pepper
Directions:
Lightly oil or spray an 8 x 11.5 baking dish.
Put plan on stove top at medium heat (for sausage), cook sausage, remove, set to side.
Cut toasted bread into large cubes and place evenly across the bottom of the baking dish.
Scatter 1/2 the sausage evenly across the bread. This is your first layer.
In a blender, add your soy milk, tofu, tahini, nutritional yeast, onion powder, mustard, salt, syrup, lemon juice, garlic powder, thyme, black pepper, marjoram, and red pepper. Blend until smooth. Pour mixture over bread / sausage mixture.
Scatter remaining sausage over the top of the casserole.
Cover dish with plastic wrap and let sit overnight. (Otherwise you can place in the freezer for at least two hours, or until the liquid is "set")
Once ready to cook, preheat oven to 325 degrees F.
Bake casserole, uncovered until lightly browned but not burned, for about 45-50 minutes. Time will depend on your oven and how brown you want your casserole.
